2023 Rosé
51% Merlot, 32% Carménère, 13% Syrah, 4% Gamay
A portion of the Merlot and the Syrah were whole cluster direct pressed into stainless steel where the juice underwent stabulation for 5 days (stirring of the juice lees) before co-fermenting using carefully selected yeast. The remaining Merlot and the Carménère were destemmed and left on skins for 2 hours before pressing to extract colour. The 4% Gamay Noir was added post fermentation to lift the fruit and to add colour and texture to the final blend.
2022 Chardonnay Village
The fruit was hand-picked and destemmed, before being pressed into a combination of stainless steel (50%) and neutral French oak (50%) and fermented using a combination of indigenous and carefully selected yeast. New French oak was used prior to bottling to round out the texture and improve mouthfeel.
2023 Sparkling Village
Each varietal for this sparkling was picked and fermented separately. The Pinot Blanc was fermented in tank, and the Pinot Gris was barrel fermented and aged. The Gamay juice was pulled (saignée) immediately after filling the tank with berries to limit colour transfer. These three wines were blended shortly prior to bottling to produce the base of this effervescent wine.
