2023 Rosé
51% Merlot, 32% Carménère, 13% Syrah, 4% Gamay
A portion of the Merlot and the Syrah were whole cluster direct pressed into stainless steel where the juice underwent stabulation for 5 days (stirring of the juice lees) before co-fermenting using carefully selected yeast. The remaining Merlot and the Carménère were destemmed and left on skins for 2 hours before pressing to extract colour. The 4% Gamay Noir was added post fermentation to lift the fruit and to add colour and texture to the final blend.
2022 Black Sage Rd. Rouge
55% Syrah, 17% Merlot, 13% Cabernet Sauvignon, 11% Carménère, 4% Cabernet Franc
The fruit was hand-picked and destemmed before fermentation began in stainless steel tanks using carefully selected strains of yeast. Twice daily pump overs were done to extract tannin and colour before the wine was pressed off and racked to a combination of neutral French oak barrel (36%) and stainless steel (64%) and aged for 16 months. Fermented and aged separately to allow each lot to showcase its true essence, all lots were blended prior to bottling.
2022 Chardonnay Village
The fruit was hand-picked and destemmed, before being pressed into a combination of stainless steel (50%) and neutral French oak (50%) and fermented using a combination of indigenous and carefully selected yeast. New French oak was used prior to bottling to round out the texture and improve mouthfeel.
2023 Gamay Village
The fruit was hand-picked and fermented in stainless steel 85% destemmed and 15% whole cluster. Twice daily pump overs were done to extract tannin and colour before the wine was pressed off and racked to a combination of neutral French oak barrel (81%) and stainless steel (19%) and aged for 6 months. Fermented and aged separately to allow each lot to showcase its true essence, the two lots were blended prior to bottling.
